From Luis Marcelino at Aroma Nativo in Colombia comes this geisha (harvested 02/08/25), honey lactic processed at 1800-1950 masl as detailed below:
- Controlled anaerobic fermentation in cherry
- Pulping
- Fermented in sealed barrels with lactic bacteria, inoculated from a previous geisha fermentation
- Sun drying on raised beds for 11 days
- 3 month stabilisation
This process leads to a truly unique combination of flavours, opening up with lemongrass, lime and a distinct thyme note on the finish. An exceptional filter or espresso.
