Background: This vibrant and funky lot from El Diviso showcases the cutting edge of Colombian coffee innovation. This Ombligon varietal – a mutation of an Ethiopian landrace – undergoes a highly experimental natural process that amplifies its wild, tropical character. Processing involves two rounds of thermal-shock, oxidisation, anaerobic fermentation and yeast inoculation under the painstakingly careful supervision of the producers.
Expect bursting notes of cherry cola, layered with juicy passionfruit and a bright kick of pineapple acidity, all wrapped in a syrupy, complex body. A coffee for the adventurous.
