White Honey (Colombia)
A world renowned coffee from the world renowned Sebastian Ramirez of Finca El Placer in Colombia at approximately 2100masl. Known for his innovative processing, this geisha underwent several complex stages of processing:
- Cherry picking, intriguingly selected a blend of 95% ripe cherries and 5% semi-ripe cherries
- A 48hr anaerobic fermentation with a C02 injection at 18°C
- A 48hr submersion in water with oxygen pumps
- Drying in marquises at 40°C, hitting 25% moisture after approximately 20 days- this is followed by further drying under polyshades
- Stabilisation in GrainPro bags for 15 days
The result is an exceptionally complex coffee that excels both as a filter and espresso, with a final cup abounding with lavender, lychee, yuzu and pink peppercorn.
