Cerro Azul - Hybrid Washed Geisha - Cafe Granja La Esperanza (Colombia)
Cafe Granja La Esperanza manages 3 farms: Cerro Azul, Potosi, and Las Margaritas, across three mountain ranges in Valle de Cauca, Colombia. What makes them so unique is their very distinct microclimates – one farm can have several different microclimates, which can make for a very complex cup.
This Hybrid Washed Geisha lot comes from the renowned Cerro Azul.
Delicate floral notes of honeysuckle, alongside bright citrus fruits and malic fruits like peaches. Subtle hints of red currants with a finish reminding us of fresh sencha, green tea.
FERMENTATION
Each cherry is handpicked at the peak of ripeness, ensuring only the finest beans move forward. After a delicate flotation process to remove lighter cherries, they monitor the natural sugars before beginning a layered fermentation journey.
For 14 hours, the cherries are placed in open air tanks, to kickstart the fermentation process. Next, they’re taken to a sealed environment for an 18-hour, oxygen-free fermentation, deepening their profile. Finally, they’re washed and pulped then undergo another aerobic fermentation for 24 more hours.
DRYING
The coffee is dried in a mechanical dryer at a temperature of 37 °C. It is then stored in a temperature-controlled warehouse at a temperature between 18 °C and 19 °C.
