El Encanto is more than just a farm - it’s a family dream turned reality, created by a collective effort of parents, siblings, and the next generation, all deeply rooted in the traditions of Colombian coffee cultivation.
Driven by a shared vision, Franky Hoyos and his family moved beyond conventional farming to embrace co-fermentation innovation. They renewed their crops with rare and exotic cultivars including Geisha, Java, Ethiopian landraces, Bourbon Aji, Caturro Chiroso, and Pink Bourbon.
PROCESS
This coffee's process was discovered by Cata Exports, working together with Franky Hoyos and his farm to develop and refine the profile for this Caturra Chiroso.
- Selection of ripe cherries
- 70h oxidation in bags
- 60h anaerobic fermentation in barrels
- Thermal shock
- Yeast Inoculated using fruit pulp from blackberries and cacao
- 48h mechanical drying
- 15 day stabilisation
FLAVOUR NOTES
This coffee is a showstopper. Due to the processing, the Chiroso explodes with big red fruit notes like cherry, strawberry, leading to a decadent flavour and mouthfeel of chocolate milk, and reminiscent of the raspberry ripple sauce on vanilla soft-serve.
