'For this exceptional lot, we selected only the ripest Pink Bourbon cherries. They underwent a meticulous fermentation process in a controlled anaerobic environment, followed by pulping. To enhance the flavour, the beans, still in mucilage, were then fermented in barrels with native bacteria and strains of special yeast, ensuring a distinctive and rich profile.
Sun-dried on raised beds for 13 days, followed by a controlled 3 month stabilisation.'
Exceptional notes of mango and lychee sweetness accompanied by a stunning rose floral, excelling as both an espresso and filter, perfect with milk.
